That is not completely correct - a baby chicken is a chick and a hen is an older chicken - but we say we eat chicken as a common name for the fowl.

A hen is a female bird.  A rooster is a male bird. Chicks are baby chickens.

Chicken is a more general term. 
That is a chicken farm.
My neighbour keeps chickens.

As far as I remember, a chicken is under 3 months old.  And since broiler-growing techniques have become so popular, we hardly ever see hens, mostly broiler chickens. Hens  are used for egg production and  we usually boil them, while we can fry, grill or do whatever  we want with broiler chickens. All the breeds have their constitutional and exterior peculiarities. Egg-laying hens are smaller and grow faster.  Eggs and meet breeds are more brawny, and broilers is the breed we usually cook.
