5. mountain climbing

4. go horse riding

3. go skiing

2. go shopping

1. go running

 
1 . I like going running
2. I like going  shopping
3. I like going skiing 
4. I like going horse riding

They are all correct except possibly 4. I would say I like going horseback riding, or simply I like riding horses.

I think that "horseback riding" is much more common in the USA. In the UK, we would usually say:
 - I like going horse riding
- I like to go horse riding (my preference)
- I like horse riding
- I like going riding 
- i like to go riding
- I like riding

 I have never heard "horse riding" and didn �t even know we had this BE /AE difference.  In the US it �s definitely "horseback riding".
 
That �s why I love this site so much.
