Please tell me the words like " car-making" "english-speaking" are compound adjectives or compound nouns. And Ving here is participle or gerund. Thanks

It depends on the rest of the sentence. In the following sentence making is a gerund, acting as a noun.
 
By this time next year, the doors will have closed on the Australian car manufacturing industry forever — after almost a century of car making.
