Is it correct to use the word "exercises" in plural when talking about pieces of written work? Or is the plural form used only when talking about physical activity? Thanks for your answers.

You can easily use exercises in plural when talking about pieces of work or an assignment. I often tell my students to do all the exercises in the book.

Exercise as an abstract noun (mental or physical activity) in only singular because it �s uncountable: e.g. Swimming is a good form of exercise.
Exercise as movement or activity to keep you fit is countable, so it can be used in plural: e.g. I do keep-fit exercises every morning.
Also a piece of work that helps you learn or practice something can be plural: e.g. Do the exercises on page 15.
