What difference is there between :
  Ermm

I have EVER been to Australia

and

I have ALREADY been to Australia

Well, firstly the sentence "I have ever been to Australia." is wrong. You can �t use "ever" like that. "Ever" is used in negative and interrogative sentences.

I haven �t ever been to Australia. // Have you ever been to Australia?

So basically no explanation is needed if you know what "I �ve already been to Australia" means.

No, I have never been to Australia.
 
Have you already been to Australia ?
Yes, I �ve already been to Australia.

"It �s the first time, I �ve ever..." is just emphasizing an idea here. It is not necessary to put the "ever" in the sentence though... Also, the placing here of "ever" is  determined by the adverbial clause (It �s the first/second time... ) but normally, it is not used in affirmative sentences.

Also... you NEVER answer a question like this: Have you ever been to Australia?
Yes, I �ve ever been to Australia. THIS is a huge no-no...
