Although it isn īt made of gingerbread, most people would call this a gingerbread man because it looks the same shape as the gingerbread man in the children īs story.
They were traditionally made of gingerbread.

It is made of sweet bread 
 
In Switzerland it is un bonhomme en pâte ou der Grittibänz

Well, speaking as someone from the land of the real Bretzel (pretzel) and Lebkuchen (gingerbread), I would say it is neither, a cookie-dough man, at best, providing something like that exists ;o)
