"So" can only modify adjectives and adverbs, never nouns.

- The products in the market were so good  that she hesitated to choose one.

I would choose SUCH as well. The sentence does not make perfect sense to me, though. I would understand the hesitation if there were SO MANY good products in the market, not if there were a few very good ones.

Minka makes a very good point. The context really calls for "so many".
 
Using "such" would lead to a sentence like this:
 
There were such good products in the market that she felt safe sending her husband to get what she needed.
