Hi, dear fellow teachers!
 
 Can you help me, please?
 I asked  students to rewrite a sentence starting by "despite": The sentence was:
 
  It was cold weather but everyone had a good time.
 
 As far as I know, there are two possible aways to rewrite the sentence correctly:
 
  *Despite the cold weather, everyone had a good time.
   *Despite being cold, everyone had a good time.
 
 However,  a student  wrote the following:
 
 * Despite the weather being cold, everyone had a good time.
 
Is it correct? Is it possible to use  "being" after the noun phrase? Is  it possible to use both in the same sentence or should we use either one or the other? 
 
I would be very grateful if you could clarify my question.

That sounds perfectly acceptable to me and a good rewrite. I �d give her/him an extra point!
 
This one:
   *Despite being cold, everyone had a good time.*
can have a slightly different meaning - that the people were cold, not necessarily the weather.

As Tapioca said  *Despite being cold, everyone had a good time.*
does have a different meaning - that the people were cold, not the weather.
 
What we would normally say is, despite it being cold... or despite the cold... or despite the cold weather...
