We say do judo, do gymnastics, play football.....
What should I say with water sports? I do kayaking/ surfing/ diving/ waterskiing....?

We say "play" for sports that include a ball, "go" for sports that end in -ing and "do" for all the rest.

I go diving
 
and
 
I do diving
 
have slightly different meanings?
 
I would use �do � for the ones you mentioned. Of course, you can also use them as verbs (I surf, I dive etc).
 
I like that rule Mario and Hassouna mentioned. That sounds like a rule just asking to be challenged.... ;-)

 I can think of a few exceptions to those �rules �, too...

 

I play chess
I play poker
I play solitaire
I play go
 
I play (substitute whatever board/card/strategy game you like)
 
In Japan, they often use �play Judo �! 
 
Tap is right in that �do � and �go � can have a difference in meaning, but not necessarily, in practice, depending on the dialect spoken.
 
Here are some alternative rules that I like, too, except that they left out the board/card/strategy game option mentioned above.:
