Is it correct if I ask :What sports does he play? Or should I ask :What sport or which sport? I�m a bit confused now:)

As it goes, they are all fine, as it is the guy who is playing the sports, whether it be one or more sports, it is one person doing it.

What sports is fine. That is what I would say, because he might play more than one sport. But - what/which sport is he best at? 
Edit: yes, actually, any of those is fine. Sport is a general term, covering all sports. If you say which sport does he play? that is alluding to only one sport. 
Maybe. Actually, I am a bit confused now. Confused

Personally, I would lean toward "what" vs "which" since there are SO many sports he may play and which tends to imply choosing one out of a selection.
 
As for the rest, I agree all three are okay.
