Is it correct to use this expression? The French s teacher is beautiful? Is it appropriate to use the genitive "s" here?

You would use "French" as an adjective here - The French teacher is beautiful.
The French classs teacher is beautiful would work but sounds clumsy.
My sisters teacher is beautiful (the teacher teaches my sisters class) - The History teacher is beautiful (the teacher teaches the subject History)

Agree with FrauSue, you cant say the Frenchs teacher, its wrong. You can say the teacher of French. This would distinguish her from a teacher whose nationality is French.

I also agree with FrauSue!  French is an adjective: a French teacher / an English teacher. I would not use the genitive. You wouldnt use it in the expresison a maths teacher !
So the genitive is impossible (no possession).
