Wouldnt you have to include the parent (s)?  There would be no confusion if you said : " a family of 5 children" or " a family of 6 (7). What do the other native speakers think?

A family of 5 or a 5-child family is fine. The first is more common but the second does get said.

a family of 5: people assume parents and 3 children
a 5-child family or a family of 7: 5 children

So yes, a five-child family is correct to say.
