Here is an exercise that can be conducted with students individually or in pairs/groups. It gives them practice selecting adjectives (and their opposites) to nouns and then creating sentences.
I have used this worksheet with my private lesson students to improve their speaking and writing. It enhances their conversations and writing ability by making it more colorful and interesting.
Students can create adjective lists of their own once they have completed this exercise.
I have adapted and modified this exercise from one I viewed online. Speaking Activities for the Classroom - D. Holmes 2004.
