keys: - Four large peeled potatoes - 1 cup flour (for the batter) - 1 teaspoon baking powder (for the batter) - 1 teaspoon salt (for the batter) - 1 teaspoon ground black pepper (for the batter) - 1 cup milk (for the batter) / or beer - 1 egg (for the batter) - 1-quart vegetable oil - 1 ˝ pounds cod fillets - Malt vinegar(serve it with…) - Lemon (serve it with…) - Tartar sauce(serve it with…) Material: - Medium bowl (for the batter) - A knife (to cut the potatoes) - Teaspoons - whisk - Dutch oven or large heavy bottom pot - Paper towel A) “we’ll start by cutting large peeled potatoes into strips ” B) “ place the potatoes in a bowl of cold water C) Mix together flour, baking powder, salt and pepper D) Stir in the milk and eggs until the batter is smooth E) Cover and refrigerate the batter F) Heat vegetable oil to 350 degrees F G) Add potatoes and fry them about 5 minutes H) Remove the potatoes to paper towels to drain I) Dredge the fish in flour and in the batter and place them in the hot oil J) Fry the fish and batches until golden brown on all sides K) Drain the fish on paper towels L) Lightly season with salt if you want M) Crisp up potatoes in the hot oil for one to two minutes
